Sweet Potato Cinnamon Muffins

I love finding healthy ways to eat some of my favourite dishes. Muffins are one “hot” category that you can really manipulate and still make it taste like the real deal. These healthy sweet potato cinnamon muffins are loaded with micro-nutrients; they keep you full and taste amazing! Best yet, I bet that you already have all the ingredients in your pantry. PS. I made this must-have pantry checklist from experience. Having to take a toddler to a grocery store (plus being 8 months pregnant) to pick up just a few things turns into a whole event. If this were the case, I wouldn’t make the recipe or I’d hold off until the weekend. Meaning, it’s really not convenient! These must-have’s solve that problem and have been an absolute life saver!

But, now that we are in fall, a mix of sweet potato, cinnamon and pumpkin spice really make you feel like you’re right in the season. The fragrance you’ll get in your kitchen plus the taste in your mouth – heaven!

Sweet Potato Cinnamon Muffins

Makes 7-8 muffins


  • 3/4 c. mashed sweet potato
  • 1 big carrot, shredded
  • 1 medium apple, grated (about 1/2 c.)
  • 1/2 c. raisins
  • 1/3 c. shredded coconut
  • 1/2 c. chopped pecans; unsalted, raw
  • 3/4 c. almond flour
  • 1/4 c. pure maple syrup
  • 1 tsp. cinnamon
  • Dash of pumpkin spice
  • 1/8 tsp. nutmeg
  • 1 tsp. baking powder
  • 2 eggs


  1. Preheat oven to 350F.
  2. Skin and boil potatoes until soft then mash.
  3. Mix all ingredients into a large bowl.
  4. Place muffin liners into muffin tray.
  5. Divide mixture equally into muffin tray.
  6. Bake for 30 minutes and until top of muffin is golden. Remove from oven and let cool.
