Raspberry Chia Cookie Recipe

Vegan, Gluten Free

Yields 8-10


  • 2 cups rolled oats
  • 2 mashed ripe bananas
  • 3 tbsp. chia seeds
  • 1 tsp. cinnamon
  • 8 tsp. raspberry jam


  1. Preheat the oven to 350F.
  2. In a small blender, blend the rolled oats. Don’t over blend into flour – keep some oats whole.
  3. In a large bowl, stir together the oats, mashed bananas, chia seeds and cinnamon. Stir well.
  4. Using a spoon, scoop out the mixture into balls onto a baking sheet.
  5. Using your thumb, press down gently in the middle of the cookie.
  6. Add the jam to the centre of the cookies evenly.
  7. Bake for 11 minutes. Enjoy!
