Healthy Pumpkin Spice Muffins For You To Make This Fall

I could willingly test and trial a million fall recipes! Nothing beats the aroma in your home and much less the yummy taste of pumpkin spice baked goods! Clean-eating muffins have been a go-to for me and are also fantastic snacks for my son (who is a toddler right now). Muffins are a quick grab-and-go and best yet, are already in their single serving sizes.

When it comes to the Holidays, there are also a LOT of seasonal foods at your local grocery store. They taste good, might seem somewhat “healthy” because it says “pumpkin” or “sweet potato” or “gluten free,” but don’t be fooled. Pumpkin Spice Muffins

Makes 8-10


  • 1 c pumpkin puree (not pie filling!)
  • 1/2 c. melted coconut oil
  • 1 tsp. vanilla
  • 2 eggs
  • 1/3 c. pure maple syrup
  • 2 c. oat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tsp. pumpkin spice
  • Optional 1/2 c. chocolate chips


  1. Preheat oven to 350F and line a muffin tin with liners.
  2. In a large bowl, whisk together the pumpkin puree, melted coconut oil, eggs, maple syrup and vanilla until well combined.
  3. In a small bowl, mix the oat flour, baking powder, baking soda, pumpkin spice and chocolate chips (if you are adding them).
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Using 1/4 c. measuring cup, scoop into each muffin tin. Bake for 22 minutes or until toothpick inserted comes out dry.
  6. Enjoy!
