I have made these chewy chocolate chip cookies about half a dozen times already. They are beyond perfected now! Anyone that I have shared these cookies with have absolutely found their new go-to chocolate chip cookie recipe. Not to mention that it’s also refined sugar-free, gluten-free and a whole lot of deliciousness! One of my good friends sent me the original recipe. I’ve made these both with natural peanut butter and then of course, natural almond butter.

Got to tell you, what I love most about these cookies is that they are so quick and easy to whip up. Chances are you already have these ingredients sitting in your pantry or fridge! They’re not “sticky” or crumbly – they turn out to be the most perfect cookie texture. If you like them a little chewier, stick to a 9 minute baking time. Whereas, for a more crisped cookie, go towards the 11 minute mark (but do check frequently!). Be sure to watch your cookies as oven’s are different as well as the size of your cookies.

Coconut sugar?

  • 3/4 c. natural almond butter Can also sub for natural organic peanut butter
  • 2/3 c. coconut sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1/2 c. semi-sweet chocolate chips


  • Preheat oven to 350F. Line a baking tray with parchment paper and set aside.
  • In a large mixing bowl, add the almond butter, egg, coconut sugar, vanilla extract and baking soda. Mix well until combined. Fold in the chocolate chips.
  • Measure out 2 tbsp. worth of cookie dough and form a ball. Place onto baking sheet and gently pat down. *Make sure you leave some generous space because these do expand!
  • Bake cookies for 9-11 minutes or until cookies are lightly browned. Remove from oven and allow cookies to cool completely before transferring to a plate.
