Vanilla Chia Pudding

Tired of your typical oats or smoothie in the morning? I don’t blame you! Even though the possibilities may be endless, we often catch ourselves making it the same way day in and day out. (Because we are all rushed in the morning, right?) PS. Have you tried our breakfast oatmeal cups?

I often recommend to my clients to start their day with higher healthy fats and lower carbohydrates. This supports a proper hormonal profile and meal-wise, it is more filling.

Chia seeds are a fantastic source of essential fatty acids and best yet, soluble fiber. Soluble fiber helps pull toxins from the intestinal tract and send toward elimination (yes, poop).

This chia seed pudding recipe along with overnight oats can be successfully prepped the night before. This makes it a great grab-and-go breakfast especially when pressed for time.

 

Vanilla Chia Pudding

Makes 1 serving

1/4 c. chia seeds

1 c. almond milk or nut milk of choice

1 tbsp. pure maple syrup

1/4 tsp. cinnamon

1/4 tsp. pure vanilla extract

1 tbsp. slivered or sliced raw almonds

1/4 c. fresh blueberries or fresh fruit of choice

Instructions

1. Mix the chia seeds, nut milk, maple syrup, cinnamon and vanilla extract in a mason jar. Stir or whisk thoroughly.

2. Allow the mixture to sit for 1-2 hours or preferably overnight to allow it to thicken.

3. When you’re ready to eat, add your slivered almonds and fresh blueberries (or fresh fruit of choice!) on top.
