Lemon Poppy Seed Muffins

Who else loves lemon? I sure do! Not only are there many health benefits to incorporating lemon in your diet, their taste is so refreshing!

I made these muffins using coconut flour – if you don’t like coconut, I recommend trying oat flour and/or almond flour. You DO taste the coconut from the coconut flour.

 

Lemon Poppy Seed Muffins

(makes about 6-8)

  • 1/2 c. coconut flour
  • 1 tbsp. poppy seeds
  • 1/2 tsp. baking soda
  • 1/3 c. melted coconut oil
  • 1/4 c. natural honey or less (I used a few tbsp’s only)
  • Juice of 1 lemon
  • 1 1/2 tbsp. lemon zest
  • 3 organic whole egs
  • 1/2 c. almond milk

Instructions:

  1. Preheat oven to 325F
  2. In a small bowl, combine coconut flour (or alternative), baking soda, poppy seeds, and lemon zest.
  3. In a separate bowl, combine the lemon juice, coconut oil, honey, almond milk and eggs.
  4. Combine the wet with the dry ingredients.
  5. Pour batter into muffin tins and bake for 20-25 minutes.
  6. Enjoy!
